The hidden wheat

Japanese food looks gluten-friendly — rice, fish, vegetables — but the seasoning betrays it. Ordinary soy sauce is brewed with wheat, so sushi, teriyaki and most dipping sauces aren't safe unless tamari is used. Soba is often cut with wheat flour, tempura and tonkatsu are wheat-battered, and ramen and udon are wheat noodles.

Where Tokyo gets it right

The city now has genuinely certified options. Gluten Free T's Kitchen in Roppongi is Asia's first GIG-certified kitchen — every dish, from rice-flour gyoza to miso-butter ramen, is safe. Stay safe
