The short answer
UMAMI HUNT has verified gluten-free handling at 27 venues in Tokyo: 12 dedicated gluten-free kitchens, 13 places with GF options on the menu, and 2 100% buckwheat soba shops. If you are coeliac, start with the 12 dedicated kitchens. "Options" means a safe dish exists, not that the kitchen is separated.
How the list is ordered
The UMAMI HUNT desk ordered the venues on three criteria, in this order. It is a safety-first order for coeliac diners, not a taste ranking.
- Type — dedicated (whole menu GF) > GF options on the menu > 100% buckwheat soba (the noodles are wheat-free, but the dipping sauce is usually wheat-brewed soy and fryers may be shared)
- English menu — yes > no (how easily you can explain the restriction)
- Price band — cheaper first

The hidden wheat
Japanese food looks gluten-friendly — rice, fish, vegetables — but the seasoning betrays it. Ordinary soy sauce is brewed with wheat, so sushi, teriyaki and most dipping sauces aren't safe unless tamari is used. Soba is often cut with wheat flour, tempura and tonkatsu are wheat-battered, and ramen and udon are wheat noodles. Always flag cross-contamination and ask for tamari. Naturally safer anchors: sashimi (with tamari), grilled fish ordered shio (salt), and juwari soba. - Is 100% buckwheat (juwari) soba safe for coeliacs?
- The noodles are wheat-free, but the dipping sauce is normally wheat-brewed soy, and fryers or boiling pots may be shared. Ask for tamari and ask about shared equipment.
- Is wasabi gluten-free?
- Fresh grated wasabi is, but cheap tube 'wasabi' can contain wheat. Ask, or stick to certified venues.
- What should I say at the restaurant?
