Every plate here starts from roasted or charcoal-grilled imo rather than wheat. The menu's headline act is the Mitsuimo Basque cheesecake, a scorched-top, custardy slice built on mashed sweet potato that once topped Amazon Japan's pastry bestseller list, alongside a Mont Blanc parfait piled with sweet-potato cream and cassis sauce that regulars order on repeat. Savory eaters aren't an afterthought: the sweet-potato pancakes use gluten-free rice flour, coconut sugar and whipped egg whites instead of standard batter, and a charcoal-grilled-imo quiche swaps in a rice-flour crust. In summer, a hojicha shaved ice topped with roasted sweet potato joins the list.
