Tokyo's vegan cafe scene is a joy. The AIN SOPH. group leads it: the original Journey in Shinjuku made its name on cloud-soft 'Heavenly' vegan pancakes, the four-floor GINZA flagship adds plant-based puddings and a patisserie, and Soar Ikebukuro stacks egg-free pancakes under house-made ice cream.

A matcha pilgrimage

For something uniquely Japanese, Suzukien in Asakusa — a tea house since 1848 — serves matcha gelato in seven escalating intensities, climaxing in a near-black No. 7 so concentrated it tastes like pure tea leaves. Most traditional wagashi (bean-paste sweets) are naturally plant-based, too.
