'White tonkatsu' — pork slow-fried at low temperature with pale breadcrumbs

Tonkatsu Narikura is a reservation-only counter restaurant in a quiet residential corner of Minami-Asagaya, built entirely around one idea: chef Mitani Seizo's pale, low-temperature-fried "white tonkatsu."

Order the Sha-ton Briand (シャ豚ブリアン) if it's on offer — a pun on chateaubriand, it's the most tender center-cut of the fillet, yielding barely 500g per pig. The kitchen fries it slow and cool rather than hot and fast, using custom breadcrumbs formulated with less sugar so they brown less in the fryer, leaving the cutlet pale rather than the usual deep gold — and correspondingly lighter, without the oil-heaviness tonkatsu can carry elsewhere. TOKYO X is the base pork, with other brands rotated in depending on the day, including Iwate's branded 岩中豚; ask which is running. The counter faces the fryer directly, so you watch the whole process, which is half the point of eating here rather than taking it home in a box.

Narikura moved from Takadanobaba to this Minami-Asagaya address in 2019. It has won Tabelog Award Bronze every year from 2021 through 2026, and made the Tonkatsu Top-100 in 2021, 2022, 2024, and 2026.

Reservations are mandatory, made through Omakase or Tabelog; walk-ins are turned away. Each diner orders a full course rather than à la carte, and the shop is strict about arrival time — late enough and it counts as a cancellation, so build in slack getting to Minami-Asagaya Station. Credit cards are accepted, so there's no need to carry cash. No English menu is confirmed, so a translation app or an English-speaking companion helps.
